The Orejón 4-burner model features an oak-colored wooden base with walnut-colored wooden sides. It has an easily removable stainless steel tray that holds two 20x20x2.5cm volcanic meat stones, creating a 20x40x2.5cm cooking surface. It includes four alcohol burners and a stainless steel lifter. The Piedrasar volcanic stone is ideal for cooking because its natural properties offer excellent heat resistance, retain heat, and release it slowly.
It's the most natural and oldest cooking method. Modern cuisine has revived this system, which is 100% free of harmful substances. Food retains its aroma and flavor without the need to add fats or oils. You can grill all kinds of meats, fish like salmon or tuna, shellfish, vegetables, and fruits.
How to heat it up?
– For home use: Ideally, heat it in the oven for approximately 40 minutes at full power, as this ensures even heating. Then, heat it for 5 minutes over direct heat to reach the optimal temperature. If heating over direct heat or on a ceramic hob, use low heat for 5 minutes to allow the stone to warm up, then increase the heat and heat for another 10 to 15 minutes. It can also be heated on a barbecue, ensuring the flame is not too intense. Once heated, place it on the steel tray and light the burners.
– For restaurants: For professional use, we recommend heating the stone in ovens that reach over 300 degrees Celsius. This ensures even heating, allowing all the stones to be placed inside at once. This speeds up service, and the customer will receive their order at the table very quickly. Once heated, the stone is placed on the steel tray using the stone lifter, and the burners are lit.
How do you clean it? Regarding cleaning, simply let it cool down, always avoid thermal shock, and wash it with water and a steel wool pad.
